Ingredients:
500g prawns (shelled and deveined)
2 tablespoons oil (tel)
1 large onion (pyaaz), finely chopped
1-2 tomatoes (tamatar), finely chopped
1 teaspoon ginger-garlic paste (adrak-lehsun ka paste)
2 green chilies (hari mirch), slit
1/2 teaspoon turmeric powder (haldi powder)
1 teaspoon red chili powder (lal mirch powder)
1 teaspoon coriander powder (dhaniya powder)
1/2 teaspoon cumin powder (jeera powder)
1 teaspoon garam masala
1 tablespoon lemon juice (nimbu ras)
Salt (namak) to taste
1/4 cup water (pani)
Fresh coriander leaves (hara dhaniya), chopped for garnish
Optional: 1/4 cup coconut milk or cream for a rich finish
Instructions:
Prepare the Prawns:
Clean the prawns, remove the shells, and devein them. Rinse them thoroughly and set aside.
Sprinkle the prawns with a little salt and lemon juice (nimbu ras) and let them rest for 10 minutes.
Heat Oil and Sauté Onions:
Heat oil (tel) in a pan over medium heat.
Add the chopped onions (pyaaz) and sauté until they turn golden brown.
Add Ginger-Garlic Paste:
Add the ginger-garlic paste (adrak-lehsun ka paste) and sauté for another minute, allowing the aroma to release.
Cook Tomatoes and Spices:
Add the chopped tomatoes (tamatar) and cook until they soften and turn mushy.
Add turmeric powder (haldi powder), red chili powder (lal mirch powder), coriander powder (dhaniya powder), cumin powder (jeera powder), and garam masala.
Stir well and cook the spices until the oil separates from the masala.
Add the Prawns:
Add the prawns (shelled and deveined) to the pan. Stir gently to coat them with the masala.
Cook the prawns for 3-4 minutes, as they cook quickly. The prawns should turn pink and opaque.
Simmer and Add Water:
Add a little water (pani) to create a gravy and bring the mixture to a simmer. Cook for another 3-4 minutes until the prawns are fully cooked and tender.
Optional Creamy Finish:
For a richer flavor, you can add coconut milk or cream at this stage and let it simmer for 2-3 minutes.
Garnish and Serve:
Garnish the Prawn Masala with freshly chopped coriander leaves (hara dhaniya).
Serve hot with steamed rice, roti, or naan.
Serving Suggestions:
Prawn Masala pairs beautifully with hot rice, jeera rice, or naan. You can also serve it with paratha or chapati for a satisfying meal.
