  • 2-3 green cardamom pods (elaichi)
  • 1 bay leaf (tej patta)
  • 1 cinnamon stick (dalchini)
  • Salt (namak) to taste

For the Biryani Masala:

  • 1 tablespoon ghee (clarified butter)
  • 2 onions (pyaaz), thinly sliced
  • 2 tomatoes (tamatar), chopped
  • 1 tablespoon ginger-garlic paste (adrak-lehsun ka paste)
  • 1 teaspoon red chili powder (lal mirch powder)
  • 1/2 teaspoon turmeric powder (haldi)
  • 1 teaspoon garam masala powder
  • 1/2 cup yogurt (dahi)
  • 1/2 cup mint leaves (pudina)
  • 1/2 cup coriander leaves (hara dhania)
  • 1/4 teaspoon saffron strands (kesar) soaked in warm milk
  • 1 tablespoon lemon juice (nimbu ka ras)
  • Salt (namak) to taste

For Chicken/Mutton (optional):

  • 500g chicken (murgh) or mutton (gosht), cut into pieces

  • 1 tablespoon ginger-garlic paste (adrak-lehsun ka paste)

  • 1 teaspoon turmeric powder (haldi)

  • 1 teaspoon red chili powder (lal mirch powder)

  • 1 tablespoon yogurt (dahi)


Steps to Prepare Biryani:

  1. Cook the Rice:

    • Wash 2 cups basmati rice (chawal) thoroughly and soak it for 20-30 minutes.

    • In a large pot, bring 4 cups water (pani) to a boil. Add 2-3 cloves (laung), 2-3 green cardamom pods (elaichi), 1 bay leaf (tej patta), and 1 cinnamon stick (dalchini).

    • Add the soaked rice and cook until it’s about 70% done. Drain the rice and set it aside.

  2. Prepare the Marinated Meat:

    • If using chicken or mutton, marinate 500g of meat with 1 tablespoon ginger-garlic paste (adrak-lehsun ka paste), 1 teaspoon turmeric powder (haldi), 1 teaspoon red chili powder (lal mirch powder), and 1 tablespoon yogurt (dahi). Let it sit for at least 30 minutes.

  3. Make the Biryani Masala:

    • Heat 1 tablespoon ghee (clarified butter) in a large pan.

    • Add the thinly sliced onions (pyaaz) and fry them until golden brown. Remove half of the fried onions for garnishing later.

    • Add 1 tablespoon ginger-garlic paste (adrak-lehsun ka paste) and cook for a minute.

    • Add chopped tomatoes (tamatar) and cook until soft.

    • Add 1 teaspoon red chili powder (lal mirch powder), 1/2 teaspoon turmeric powder (haldi), and 1 teaspoon garam masala powder. Stir well.

    • Add the marinated meat and cook until it’s browned and cooked through.

    • Add 1/2 cup yogurt (dahi), 1/2 cup mint leaves (pudina), and 1/2 cup coriander leaves (hara dhania). Cook for another 5 minutes.

  4. Layer the Biryani:

    • In a heavy-bottomed pot, layer the cooked meat masala, followed by the partially cooked rice.

    • Sprinkle the reserved fried onions, saffron strands (kesar) soaked in warm milk, and a tablespoon of lemon juice (nimbu ka ras) on top.

    • Cover the pot with a tight-fitting lid, and cook on low heat (dum) for 20-25 minutes. You can place a heavy pan on top to seal in the steam.

  5. Serve and Enjoy:

    • Gently fluff the biryani with a fork before serving.

    • Serve hot with raita (yogurt dip), salad, or boiled eggs on the side.
