Ingredients:

  • 500g mutton (goat meat or lamb), cut into pieces

  • 2 onions (pyaaz), finely chopped

  • 2 tomatoes (tamatar), pureed

  • 1 tablespoon ginger (adrak) garlic (lehsun) paste

  • 1/2 cup yogurt (dahi)

  • 2 teaspoons red chili powder (lal mirch)

  • 1 teaspoon ground coriander powder (dhania)

  • 1 teaspoon cumin powder (jeera)

  • 1 teaspoon garam masala

  • 2-3 green cardamom pods (elaichi)

  • 2-3 cloves (laung)

  • 1-inch cinnamon stick (dalchini)

  • 1 bay leaf (tej patta)

  • 1/4 cup mustard oil (sarson ka tel) or vegetable oil

  • Salt (namak) to taste

  • 1/2 cup water (pani)

  • Fresh coriander leaves (dhaniya), chopped, for garnish


Steps to Prepare Mutton Curry:

  1. Prepare the Marinade:

    • In a bowl, combine the mutton (goat or lamb) pieces with yogurt (dahi), ginger (adrak) garlic (lehsun) paste, red chili powder (lal mirch), ground coriander powder (dhania), cumin powder (jeera), and salt (namak).

    • Mix well and let the meat marinate for at least 1-2 hours to tenderize and absorb the flavors.

  2. Cook the Aromatics:

    • Heat mustard oil (sarson ka tel) or vegetable oil in a large pot or pressure cooker over medium heat.

    • Add the cardamom pods (elaichi), cloves (laung), cinnamon stick (dalchini), and bay leaf (tej patta). Allow them to splutter and release their fragrance.

  3. Sauté Onions:

    • Add the finely chopped onions (pyaaz) to the pot and sauté until they turn golden brown. This will take about 8-10 minutes.

  4. Add Tomatoes and Cook Spices:

    • Add the pureed tomatoes (tamatar) and cook for 5-7 minutes, until the oil separates from the masala.

    • Add the marinated mutton (goat or lamb) pieces to the pot and cook for another 5 minutes, stirring occasionally to brown the meat.

  5. Simmer the Curry:

    • Add enough water (pani) to cover the mutton. Bring it to a boil, then reduce the heat and let the curry simmer on low heat for 1.5-2 hours (or cook under pressure for 25-30 minutes) until the mutton becomes tender and the gravy thickens.

  6. Finish the Dish:

    • Once the mutton is tender, stir in the garam masala and check for seasoning. Add salt (namak) if needed.

    • Let the curry simmer for another 5-7 minutes to blend the flavors.

  7. Garnish and Serve:

    • Garnish the Mutton Curry with freshly chopped coriander leaves (dhaniya).

    • Serve the curry hot with naan, roti, or steamed rice.
