  • 1 teaspoon ground cumin powder (jeera)

  • 1 teaspoon garam masala

  • 2-3 green cardamom pods (elaichi)

  • 2-3 cloves (laung)

  • 1-inch cinnamon stick (dalchini)

  • 1 bay leaf (tej patta)

  • 1/4 cup mustard oil (sarson ka tel)

  • Salt (namak) to taste

  • 1/2 cup water (pani)

  • Fresh coriander leaves (dhaniya), chopped, for garnish


Steps to Prepare Rogan Josh:

  1. Prepare the Marinade:

    • In a bowl, mix the lamb (maas) pieces with yogurt (dahi), ginger (adrak) garlic (lehsun) paste, Kashmiri red chili powder (lal mirch), ground coriander powder (dhania), ground cumin powder (jeera), and salt (namak).
