Steps to Prepare Palak Paneer:
Blanch the Spinach:
Boil water in a large pot and add the chopped spinach (palak). Let it cook for 2-3 minutes, just until the spinach wilts.
Drain the spinach and immediately transfer it to a bowl of cold water to preserve its green color.
Once cooled, blend the spinach into a smooth puree using a blender. Set aside.
Prepare the Gravy:
Heat oil (tel) in a pan and add cumin seeds (jeera). Let them splutter.
Add the chopped onions (pyaaz) and sauté until golden brown.
Add the ginger (adrak) garlic (lehsun) paste and chopped green chili (hari mirch), if using, and cook for 2 minutes.
Add the pureed tomatoes (tamatar), turmeric powder (haldi), coriander powder (dhania), red chili powder (lal mirch), and salt (namak). Cook until the oil starts separating from the masala (spice mix), about 5-7 minutes.
Cook the Spinach and Paneer:
Add the spinach puree to the pan and mix well with the masala. Let it simmer for 5 minutes to allow the flavors to blend.
Add the paneer cubes to the spinach gravy and stir gently. Let it cook for another 5-7 minutes.
Add garam masala and stir again. You can also add cream for a richer texture.
Garnish and Serve:
Garnish with fresh coriander leaves (dhaniya) and serve hot with roti, naan, or rice.
